Food defense plans were voluntary before the Food Safety Modernization Act (FSMA), allowing employee information to be compiled and stored at the facility’s discretion.
With FSMA’s compulsory measures, however, facilities now need to ensure that their Food Safety Plan, associated training schedules, and employee certifications are centralized and easily accessible. The FDA has mandated the ability to present any necessary plans within 24 hours, spanning as far as two years back.
The Intentional Adulteration rule is the final FSMA hurdle, and that first deadline looms in July 2019 for organizations with over 500 employees.
